烤鸡之法
欲制佳味烤鸡,其法如下:
先选肥硕之鸡,宰而净之,内外以盐、姜、蒜、椒等料遍敷,使味能入里。料之多寡,当以鸡之大小适度调配。
次取腌好之鸡,置诸烤盘,刷以油,可使鸡皮色黄而香脆。
再者,预热烤箱,以适度火候烘之。初时火力宜强,使鸡表速干定形,后调至温火,慢烘使其熟透。烘烤之时,需常察鸡色,适时翻转,务使周身受热均匀。色若金黄,以筷刺其厚肉之处,无血水渗出,则鸡熟矣。
